Every March the orange groves of Veracruz, Colima and the Yucatán explode in white petals that perfume the air for barely three weeks. Our beekeepers roll their hives in just before first blossom, let the bees gorge on citrus nectar, then pull the supers the moment the last petals drop. That once-a-year harvest is spun, gravity-strained and bottled RAW & Unfiltered, so the honey tastes exactly like it does inside the comb—floral, slightly zesty and warm.

Straining: coarse mesh only, to remove wax chips while keeping pollen and enzymes intact.

Resting: honey settles for 48 h so air bubbles rise naturally; then it’s filled into drums, totes or 60 lb buckets.
