Orange Blossom Honey (Light Amber)

Source Plant & Botanical Notes
Botanical origin: Citrus sinensis (sweet orange tree)
Each spring, from late March through early April, Mexico’s orange groves in Veracruz, Colima, and Yucatán erupt in a fragrant, white bloom that lasts just two to three weeks. Our beekeepers place hives on grove edges just before the first blossoms open, giving bees access to pure citrus nectar at its peak. When the last petals fall, the honey supers are pulled, and the harvest is spun and strained—RAW & Unfiltered, with no heat or ultrafiltration. The result is a once-a-year honey that captures both the boldness and beauty of citrus in full bloom.
Color
Orange Blossom Honey (Light Amber) glows with a deep golden hue—clear enough to catch sunlight in a glass, yet rich enough to bring visual warmth to baked goods or bottled blends. Its luminous amber tone reflects the presence of slightly higher polyphenols and minerals compared to Extra White and White grades, giving this varietal both character and color.
Aroma & Flavor
-
Aroma: A bright burst of orange zest, rounded by jasmine-like blossom notes and a faint undercurrent of warm citrus peel.
-
Flavor: Bright citrus upfront, honeyed body in the middle, and a clean, dry finish with a subtle whisper of vanilla.
-
Mouthfeel: Smooth, quick-pouring, and lightly viscous—never thin or syrup-heavy. Balanced and layered for both culinary finesse and everyday use.
Texture & Crystallization
Like all raw honeys, Light Amber Orange Blossom Honey will naturally crystallize over time. Its moderate fructose-to-glucose ratio leads to a soft, creamy crystallization that maintains spreadability and aroma. To re-liquefy, simply place the container in warm water (~100 °F / 38 °C) and stir gently. The honey melts back to its original fluid form without compromising flavor or nutrients.
Harvest & Handling
-
Bloom window: Late March to early April
-
Forage zone: Bees work within a 3 km radius of solid Citrus sinensis stands
-
Extraction: Supers are uncapped by hand; honey is spun at room temperature
-
Straining: Coarse mesh filtering only—removes wax, retains pollen and enzymes
-
Resting: 48-hour natural settle allows air bubbles to rise before filling

Pure, Raw & Unfiltered Quality
This honey is presented in its most natural state, completely raw and unfiltered. There’s no pasteurization, no ultrafine filtering, and absolutely no shortcuts. It’s harvested at peak bloom and gently strained to remove large pieces of comb, while preserving all the beneficial elements: live enzymes, antioxidants, natural pollen, and delicate aromatic compounds. The result is pure, unaltered honey, just as nature intended, delivered without heat damage, so every batch retains its full strength and true flavor.
