Each late-March, Mexico’s orange groves burst into a snowy haze of blossoms that lasts barely three weeks. Our beekeepers roll their hives in on day one, let the bees drink nothing but orange-flower nectar, then spin the frames the moment the last petals fall. The honey is gravity-strained and bottled RAW & Unfiltered, so what you taste is exactly what was inside the comb—pure blossom, untouched by heat or heavy filtration.

  2. Cool-room harvest: frames uncapped by hand, honey spun at ambient temperature—no heat ever applied.

  3. Coarse straining only: wax chips out, pollen and enzymes stay in.

  4. Natural settle: 48 h rest, then straight into drums, totes or 60 lb buckets.
