Source Plant & Botanical Notes

Botanical name: Cocos nucifera (coconut palm)
Along Mexico’s Pacific coast and select Caribbean keys, coconut palms unfurl towering inflorescences laden with pale-gold flowers. Each spadix opens for only a few mornings, releasing droplets of lightly fragrant nectar that honey bees eagerly collect. Because coconut plantations often sit amid mangroves, hibiscus, and sea-grape, the bees’ forage is predominantly coconut yet subtly multi-floral—yielding an ethereal white honey found in very few corners of the world.

Color

White / Water-clear — one of nature’s palest honeys. Its crystalline appearance signals minimal pollen pigments and careful, unheated handling.

Aroma & Flavor

  • Aroma: Soft vanilla, tender coconut flesh, and a hint of sea-sprayed orchid.

  • Flavor: Feather-light sweetness with creamy coconut nuance and a clean, non-cloying finish. No added flavoring—this is the blossom’s own profile, captured intact. Lovers of delicate honeys (think kiawe or tupelo) will find Coconut Honey equally refined yet comfortingly tropical.

Texture & Crystallization

Rich in fructose, Coconut Blossom Honey remains fluid for many months, perfect for drizzling. When it eventually sets, it forms ultra-fine, buttery crystals that spread like whipped cream—ideal for premium creamed-honey formats.

Origin & Harvest

  • Region: Remote coastal groves in Colima, Guerrero, and the Yucatán barrier keys

  • Bloom window: Brief flushes after late-spring rains (April–June)

  • Method: Frames are removed within 24 h of capping, spun at ambient temperature, then gravity-strained only—never pasteurized or ultrafiltered—preserving enzymes, trace minerals, and the nectar’s faint coconut bouquet. Annual yield is extremely limited due to the palms’ sporadic flowering and challenging access.

Culinary Pairings & Uses

Fresh fruit & yogurt Drizzle over papaya, pineapple, or Greek yogurt for island flair
Baking & pastry Enhances coconut macaroons, chiffon cakes, and panna cotta glazing
Savory accents Balances spice in Thai dressings or brushed on grilled shrimp

Pure, Raw & Unfiltered Quality

This honey is presented in its most natural state, completely raw and unfiltered. There’s no pasteurization, no ultrafine filtering, and absolutely no shortcuts. It’s harvested at peak bloom and gently strained to remove large pieces of comb, while preserving all the beneficial elements: live enzymes, antioxidants, natural pollen, and delicate aromatic compounds. The result is pure, unaltered honey, just as nature intended, delivered without heat damage, so every batch retains its full strength and true flavor.
