For just 2 to 3 weeks each spring, Mexico’s Citrus sinensis groves become a snow-white haze of fragrant petals. Bees foraging solely on this nectar create a rare Water White honey, scoring a strict 0mm to 8mm on the Pfund scale. Absolutely clear and completely devoid of color, this is the most pristine grade available. Chefs, mixologists, and formulators prize this specific harvest when recipes demand flawless transparency and a whisper-light citrus profile without any visual interference.
Delicate citrus-floral flavor & silky crystallization
The aroma opens with fresh orange blossom and honeysuckle, finished by a hint of green citrus peel. The flavor delivers a gentle, elegant floral sweetness, followed by a clean, crystalline exit with no bitterness and no lingering weight. Thanks to its balanced sugar ratio, the honey stays pourable for weeks. When raw crystallization naturally sets in, it forms fine, silky granules that spread effortlessly. Simply warm to 38 °C / 100 °F to regain a flawless, water-clear pour.
Pure, Raw & Unfiltered integrity
Hives sit within 3 km of dense orange groves. Frames are hand-uncapped, spun at ambient temperature, and only coarse-strained. The honey is never pasteurized and never ultra-filtered. Forty-eight hours of gravity settling lift bubbles while preserving pollen, enzymes, and the delicate citrus volatiles that give this honey its signature profile.
60-lb bucket advantages
-
Food-service economy: One food-grade pail equals sixty retail jars, dramatically trimming cost per pound and packaging waste.
-
Pump-ready lid: The wide-mouth, tear-strip cover fits standard bucket pumps. The side handle keeps pours controlled and mess-free.
-
Space-smart storage: The stackable footprint slips easily into bakeries, cafés, and small production lines, making it perfect when 55-gallon drums are too large.

A Natural Process: Honey Crystallization
Raw, 100% pure honey naturally crystallizes over time, especially in larger containers like buckets, drums, and totes. This doesn’t mean it’s old or spoiled. It’s actually a sign that the honey hasn’t been overheated, diluted, or over-processed.
Crystallization happens when natural sugars in real honey form tiny crystals.
Texture may become thick, grainy, or semi-solid, but flavor and quality remain the same.
Enzymes, aroma, and beneficial nutrients stay intact because the honey is still raw.
To make crystallized honey liquid again, gently warm the closed container or the portion you need in a warm water bath and stir until smooth. Avoid boiling, direct flame, or high-heat microwaving, as excessive heat can damage the honey’s natural properties.
