Once a year, in the warm cusp of spring, Mexico’s orange groves burst into bloom, creating a dense, snowy haze of petals that lasts just two to three weeks. This brief floral window, typically unfolding from late March through early April, defines the harvest season for Water White Orange Blossom Honey. Our beekeepers position hives along orchard edges at the first light of bloom, allowing bees to forage almost exclusively on orange blossoms. Once the petals fall and the bloom fades, frames are harvested and the honey is gently extracted, RAW & Unfiltered, never heated, never ultrafiltered, and never altered with additives. The result is one of the palest and most delicate expressions of citrus honey, exceptionally clear, refined, and exactly as nature made it.
Color
This honey is nearly transparent, with an almost glass-like brilliance and only the slightest trace of pale straw. Classified as Water White (0mm–8mm) on the Pfund scale, it represents the lightest commercial honey color grade possible. Texture & Crystallization

Crystallization is not a defect, it is one of the clearest signs that the honey remains raw and unadulterated. To return it to a liquid state, place the container in warm water at 100 °F (38 °C) and stir gently. This preserves its natural enzymes, aroma, and floral character without heat damage.
