Source Plant & Botanical Notes

Botanical origin: Citrus sinensis (sweet orange tree)
In early spring, Mexico’s Gulf and Pacific coasts burst into bloom with the intoxicating fragrance of citrus orchards. From late March through mid-April, orange trees flower for a narrow window of just 2–3 weeks—a fleeting event that defines the harvest calendar for White Orange Blossom Honey. Beekeepers station their hives within 3 km of orange groves at peak bloom, allowing bees to forage exclusively on orange blossom nectar. As soon as the last blossoms fall, honey-laden frames are collected and gently spun at ambient temperature. The result is a rare, raw honey—vivid, floral, and unmistakably citrus.

Color

This honey glows with a clear, pale straw hue—lighter than Extra Light Amber but just a shade deeper than Extra White. Its clarity reflects both its freshness and its minimal processing, while the subtle golden tint hints at a delicate citrus complexity.

Aroma & Flavor

  • Aroma: Fresh orange zest rises first, followed by soft jasmine florals and a whisper of vanilla.

  • Flavor: Crisp citrus blossom leads the way, balanced by a smooth honeyed mid-palate and a clean, dry finish. There’s no lingering heaviness or molasses-like weight—just bright, botanical elegance.

  • Texture: Fluid and spoon-coating with a silky mouthfeel; pours cleanly and smoothly from jars or squeeze bottles.

Texture & Crystallization

White Orange Blossom Honey has a moderate fructose-to-glucose ratio, giving it a naturally pourable texture that will gradually crystallize over time—a mark of raw quality. When it does set, it forms fine, soft crystals. To re-liquefy, simply rest the container in warm water (~100 °F / 38 °C) and stir gently. No heat damage, no loss of aroma—just a return to its smooth, floral form.

Harvest & Handling

  • Short bloom window: March–April

  • Hive proximity: Within 3 km of Citrus sinensis groves

  • Harvest: Frames uncapped by hand and spun at ambient temperature

  • Filtering: Only coarse straining to retain pollen, enzymes, and aromatic compounds

  • Settling: Gravity-settled for 48 hours before packing—no ultrafiltration, no heat

  • Raw & Unfiltered: Absolutely no pasteurization or microfiltration; every drop contains the full complexity of the orange grove.
