Source Plant & Botanical Notes

Botanical origin: Citrus sinensis (sweet orange tree)
Once a year, in the warm cusp of spring, Mexico’s orange groves erupt into bloom—a dense, snowy haze of petals that lasts just two to three weeks. This fleeting floral window, occurring from late March through early April, defines the harvest season for Extra White Orange Blossom Honey. Our beekeepers place hives along orchard edges at daybreak of the bloom, ensuring bees forage exclusively on orange blossoms. When the final petals fall, frames are harvested, and the honey is gently extracted, RAW & Unfiltered—with no heat, no ultrafiltration, and no additives. What remains is the clearest, brightest expression of the citrus grove, captured as nature intended.

Color

This honey is almost water-clear, with only the faintest whisper of straw-gold—a hue so delicate it’s classified as Extra White on the Pfund scale. It’s a visual hallmark of purity and minimal mineral content, prized by chefs and formulators alike for applications that demand absolute clarity.

Aroma & Flavor

  • Aroma: Bright and clean, with a burst of orange blossom and honeysuckle, finished by a fresh note of green citrus peel.

  • Flavor: Gentle floral sweetness up front, followed by a mellow, crystalline finish. There’s zero bitterness or lingering weight, making it ideal for those who appreciate a clean, elegant honey.

  • Texture: Quick-flowing and feather-light, yet unmistakably honey—smooth, pourable, and easy to work with across both food and cosmetic applications.

Texture & Crystallization

Thanks to its natural sugar ratio and raw preservation, Extra White Orange Blossom Honey will eventually crystallize. When it does, it forms fine, silky granules that retain flavor and spreadability. Crystallization is a natural proof of rawness—not a flaw. To restore to liquid form, simply warm the container in 100 °F (38 °C) water and stir gently. No heat damage, no loss of volatile floral notes.

Harvest & Handling

  • Short bloom: Late March–early April

  • Forage range: Bees forage within 3 km of dense Citrus sinensis groves

  • Harvesting: Frames uncapped by hand and spun at ambient temperature

  • Straining: Coarse straining only—removes wax, leaves pollen and enzymes

  • Settling: Honey rests for 48 hours to allow air bubbles to rise, then it’s packed directly into drums, buckets, or totes

  • Always raw & unfiltered
