Source Plant & Botanical Notes

Botanical origin: Citrus sinensis (sweet orange tree)
Every spring, for just a few weeks in late March through early April, Mexico’s orange groves in Veracruz, Colima, and the Yucatán are awash in white blossoms. Their intense floral fragrance signals one of the year’s most important nectar flows—a fleeting window during which bees gather almost pure orange blossom nectar. Our hives are placed at grove edges just before the bloom begins. Once flowering ends, supers are harvested and the honey is extracted the same day—RAW & Unfiltered, with no heat and no ultrafiltration. Extra Light Amber is a slightly deeper, richer expression of orange blossom honey—more body than the pale White grade, but with the same clarity and citrus brightness.

Color

This honey glows with a sun-warmed extra-light amber hue, like morning light passing through glass. It’s richer than white varietals, yet still refined—clear, bright, and visually stunning. Its amber tone hints at slightly elevated polyphenols and aromatic compounds while maintaining an elegant pour.

Aroma & Flavor

  • Aroma: Bright orange blossom leads the nose, followed by a hint of marmalade and soft sweet almond.

  • Flavor: The palate opens with a lively citrus note, softens into warm honeyed mid-tones, and closes with a caramel whisper—just enough to linger without heaviness.

  • Mouthfeel: Silky and coating without being dense—an indulgent texture that feels luxurious on the spoon.

Texture & Crystallization

With a moderate fructose-to-glucose ratio, this honey remains pourable for weeks but will gradually crystallize—a natural sign of its raw authenticity. When it does set, it forms fine, spreadable crystals that preserve both flavor and aroma. To return to liquid, simply rest the container in warm water (~100 °F / 38 °C) and stir gently—no need for harsh reheating.

Harvest & Handling

  • Bloom window: Late March – early April

  • Forage radius: Bees collect within 3 km of pure Citrus sinensis groves

  • Extraction: Supers uncapped by hand and spun at ambient temperature

  • Filtering: Coarse straining removes wax but keeps enzymes, pollen, and aromatics intact

  • Packing: After 48 hours of natural settling, honey goes directly into drums, totes, or 60 lb buckets—no heat tunnels, no micro-filtration

Culinary Pairings & Uses
