These natural variations are part of real honey and do not qualify as a product defect when the product received matches the item purchased and the specifications listed on our website.

Refunds, replacements, or credits are reviewed case by case and are not guaranteed automatically. We may request photos, order information, product details, or that the item be returned before approving any resolution.

Shipping and handling charges are non-refundable unless the issue was caused by an error on our side.

Used, or partially consumed products may not be eligible for a refund unless we determine there was a verified quality issue.

Purchases made through third-party retailers or marketplaces are not eligible for a refund directly through Honey Blossom. Please contact the retailer where the purchase was made and follow their return policy.

Raw, 100% pure honey naturally crystallizes over time, especially in larger containers like buckets, drums, and totes. This doesn’t mean it’s old or spoiled. It’s actually a sign that the honey hasn’t been overheated, diluted, or over-processed.

Three hexagonal glass jars filled with extra-white, creamy arugula honey, displayed beside an illustration of delicate arugula flowers and leaves
  • Total price: $249.98
  • Net weight: 60 lb
  • Price per pound: $4.16/ lb

Unlike most generic wildflower honeys, Arugula (Rocket) Honey is a true single-origin field honey, produced when bees work the small white blossoms of Eruca sativa in cool-season arugula fields. As the plants bolt, they send up delicate flower stalks rich in nectar that bees eagerly collect, yielding a rare honey from a crop better known for salad greens than for beekeeping. Its Extra White color grade makes it especially prized for foodservice: snow-pale, luminous, and creamy, ideal wherever you need a light, clean honey that won’t add color, from artisan pastries and fresh cheeses to premium yogurts and pale sauces.

Robust flavor & lush, creamy crystallization

Aroma: soft notes of spring blossoms, fresh garden herbs, and a hint of green almond.
Flavor: a clean, mellow sweetness that unfolds into delicate herbal and nutty tones, young arugula, white flowers, and gentle citrus. The finish is refined and lightly peppery, never sharp or bitter.

Texture & stability: naturally thick, slow-pouring, and spoonable from the start, this honey’s higher glucose content encourages rapid, even crystallization. Within a relatively short time it sets into dense, ultra-fine, creamy crystals, never gritty, making it perfect as a silky spread, for bakery fillings, or whipped and aerated formats. Gentle warming easily returns it to a liquid state when a pourable texture is desired. Rapid crystallization is a hallmark of raw purity, not a flaw.

Pure, Raw & Unfiltered integrity

Harvested once per season at the height of the arugula bloom, frames are pulled promptly after capping, extracted at ambient temperature, and gravity-strained only. Never heated, pasteurized, ultrafiltered, or blended. Every batch preserves its live enzymes, natural antioxidants, pollen signatures, and aromatic compounds, authentic markers of raw, high-quality monofloral honey.

60-lb Bucket advantages (packaging, handling, logistics)

  • Foodservice scale: ~60 lb (27.2 kg) in food-grade HDPE open-head pails with tamper-evident lids.

  • Operational ease: wide-mouth pails accept standard pumps and scoops; the naturally thick, creamy body is easy to portion, bucket, or decant into smaller containers or production kettles.

  • Cost-effective: delivers excellent per-ounce value for bakeries, gelato and yogurt makers, cheese producers, cafés, and specialty food manufacturers.

  • Efficient logistics: stackable, shrink-wrappable, lot-coded. Store at 59–77°F (15–25°C). Reliquefy gently if needed to protect flavor and enzymatic activity.

Culinary versatility

  • Premium dairy & cheeses: the extra white color and rich, creamy texture make it ideal for yogurt, mascarpone, ricotta, chèvre, and fresh cheeses without tinting them.

  • Artisan breads & pastries: folds beautifully into doughs, laminated pastries, glazes, and fillings where a pale hue and nuanced herbal sweetness are essential.

  • Breakfast bowls & spreads: spoon over oatmeal, granola, and smoothie bowls; its naturally spreadable crystals shine on toast, crêpes, biscuits, and waffles.

  • Salads, dressings & vegetables: whisk into vinaigrettes, grain salads, and roasted vegetable glazes, where subtle peppery-herbal notes complement leafy greens and root vegetables.

  • Cocktails & zero-proof drinks: blends smoothly into spritzers, gin and tequila builds, or herb-forward mocktails, adding gentle sweetness and a fresh, green edge.

Why choose our Arugula Honey, 60-lb Bucket

This honey captures an unexpected side of a familiar ingredient: nectar from flowering arugula fields transformed into an Extra White, creamy, monofloral honey. Sourced from carefully managed plantings and harvested during the brief bolting window, it offers a modern flavor profile, light in color yet complex, with thick body and fine, spreadable crystallization that’s tailor-made for premium foodservice. Packed in a bulk-friendly 60-lb pail, it delivers both distinctive origin storytelling and the everyday practicality chefs, bakers, and manufacturers need at scale.

A Natural Process: Honey Crystallization

Raw, 100% pure honey naturally crystallizes over time, especially in larger containers like buckets, drums, and totes. This doesn’t mean it’s old or spoiled. It’s actually a sign that the honey hasn’t been overheated, diluted, or over-processed.

  • Crystallization happens when natural sugars in real honey form tiny crystals.

  • Texture may become thick, grainy, or semi-solid, but flavor and quality remain the same.

  • Enzymes, aroma, and beneficial nutrients stay intact because the honey is still raw.

To make crystallized honey liquid again, gently warm the closed container or the portion you need in a warm water bath and stir until smooth. Avoid boiling, direct flame, or high-heat microwaving, as excessive heat can damage the honey’s natural properties.
