Raw, 100% pure honey naturally crystallizes over time, especially in larger containers like buckets, drums, and totes. This doesn’t mean it’s old or spoiled. It’s actually a sign that the honey hasn’t been overheated, diluted, or over-processed.

For just 2 to 3 weeks each spring, Mexico’s Citrus sinensis groves become a snow-white haze of fragrant petals. Bees foraging solely on this nectar create a rare Water White honey, scoring a strict 0mm to 8mm on the Pfund scale. Absolutely clear and completely devoid of color, this is the most pristine grade available. Chefs and formulators prize this specific harvest when recipes demand flawless transparency and a whisper-light citrus profile without any visual interference.

Delicate citrus-floral flavor & silky crystallization

The aroma opens with fresh orange blossom and honeysuckle, finished by a hint of green citrus peel. The flavor delivers a gentle floral sweetness, followed by a clean, crystalline exit with no bitterness and no lingering weight. Thanks to its balanced sugar ratio, the honey stays pourable for weeks. When raw crystallization naturally sets in, it forms fine, silky granules that spread effortlessly. Simply warm to 38 °C / 100 °F to regain a flawless, water-clear pour.

Pure, Raw & Unfiltered integrity

Hives sit within 3 km of dense orange groves. Frames are hand-uncapped, spun at ambient temperature, and only coarse-strained. The honey is never pasteurized and never ultra-filtered. Forty-eight hours of gravity settling lift bubbles while preserving pollen, enzymes, and delicate citrus volatiles.

3,267-lb IBC tote advantages

  • Maximum economy: One reusable, food-grade IBC tote (approximately 1,482 kg) replaces five drums or dozens of pails, slashing unit cost and packaging waste.

  • High-volume flow: The 2-inch bottom discharge valve mates with sanitary hoses for rapid, pump-fed production. A 6-inch top manway simplifies CIP and visual inspection.

  • Pallet-smart logistics: The steel-cage design fits a standard 48 by 40-inch footprint with four-way forklift pockets, stacking securely and moving fast on busy docks.

  • Scarcity hedge: Filling one tote drains several orchards. Reserving now secures year-round supply before the next 11-month wait.

Why choose our Water White Orange Blossom Honey 3,267-lb IBC Tote?

Produced during a fleeting 2 to 3-week citrus bloom, this Water White grade (0mm to 8mm) is completely devoid of color, chosen when absolute transparency is essential. Its profile is whisper-light: fresh orange blossom, gentle floral sweetness, and a crisp, clean finish. It remains fluid for extended handling and crystallizes into fine, silky granules that restore easily with mild heat.

Raw, unfiltered, and minimally handled, it retains pollen, enzymes, and delicate aromatics. The 3,267-lb IBC tote delivers maximum processing efficiency and unparalleled color purity for premium beverage and confectionery formulations at an industrial scale.

A Natural Process: Honey Crystallization

Raw, 100% pure honey naturally crystallizes over time, especially in larger containers like buckets, drums, and totes. This doesn’t mean it’s old or spoiled. It’s actually a sign that the honey hasn’t been overheated, diluted, or over-processed.

  • Crystallization happens when natural sugars in real honey form tiny crystals.

  • Texture may become thick, grainy, or semi-solid, but flavor and quality remain the same.

  • Enzymes, aroma, and beneficial nutrients stay intact because the honey is still raw.

To make crystallized honey liquid again, gently warm the closed container or the portion you need in a warm water bath and stir until smooth. Avoid boiling, direct flame, or high-heat microwaving, as excessive heat can damage the honey’s natural properties.
