Foraged by bees across five jungle bloom waves—Campanita, Dzidzilché, Kaatzim, Tzalam and Chaká—this polyfloral honey captures Mexico’s low-land biodiversity in a single pour. Its Extra Light Amber clarity signals low mineral content and gentle, unheated handling, offering a pale-gold glow that brightens recipes where finesse matters.

Delicate flavor & ultra-fine crystallization

The aroma evokes morning dew on tropical orchids, with a hint of vanilla-herb freshness. Flavor opens with airy floral sweetness, then whispers of green mango and citrus zest. A naturally high F/G ratio keeps the honey fluid for months; when crystals finally form, they’re velvet-fine and melt instantly—perfect for high-volume pumps, drizzles or creamed-honey lines.

Pure, Raw & Unfiltered integrity

Frames leave the rainforest within 24 h of capping, are spun at ambient temperature and gravity-strained only. No pasteurization, no ultrafiltration—live enzymes, diverse pollen and delicate aromatics stay intact for a clean-label, nutrient-dense ingredient.

A Natural Change

Honey Crystallization

Pure honey may crystallize over time, changing from a flowing liquid to a thicker, grainy, or firm texture. This is a normal process and does not, by itself, mean your honey has spoiled.

Crystallization happens when glucose, one of honey’s natural sugars, forms crystals. The timing and texture vary depending on the honey’s floral source and storage temperature. Some varieties crystallize quickly, while others stay liquid much longer.

Prefer your honey liquid?
Place the portion you need in a clean, food-safe container and gently warm it in a warm water bath. Stir occasionally until the crystals dissolve. Avoid boiling water, direct flame, and high-heat microwaving to help preserve its delicate flavor and aroma.

Store honey tightly closed in a cool, dry place.
